Ok, I've been looking at that picture, and I'm trying to make out exactly what's in that vegetable stew.

It looks like potatoes, onions, carrots, and is the last thing some variety of egg plant? I'd think that pretty much any kind of egg plant would all but disintegrate if placed in a stew.
