I really hope I didn't miss the setting because I did try to look for it, but where's the setting to not automatically watch topics that you post in?

Profile -> Topics being watched. It's a tab button near the top.

EDIT: It's also in your preferences under your profile as well.

That tab allows me to unwatch topics manually, but is there a way to prevent the addition of topics to the list in the first place?

Under preferences, I think it's the "Notify me of new messages" or something like that.
