I have just watched a few so I couldn't say much about Japanese Actors/Actresses but I liked the way Nakama Yukie portrayed the role of a teacher and a Yakuza princess on the JDrama Gokusen.
Matsuyama Ken'ichi did a good job as L too in the Live Action movies of Death Note. It is said that no other actor can be able to pull L's character off other than him, so that is really something.
Then again, I can't really say that these two are really my favorite but I find their acting remarkable enough - it was worth watching them indeed.

Actress - Hirosue Ryoko. She's great in films like Okuribito (Best Foreign Film Oscar in 2009) and dramas like Yasuko to Kenji. Her ability to do her dialogue in French throughout in Luc Besson's Wasabi was impressive. Hirosue-san doesn't speak French and learnt her lines phonetically! I also have a soft spot for Inoue Mao, Haruka Ayase and Horikita Maki.
Actor - Matsuyama Kenichi (Noruwei no Mori, Detroit Metal City, Death Note)! Watanabe Ken is another obvious contender, I guess, although if you want me to name an actor of Japanese cinema that I am impressed with in the classic sense I'd choose the late Mifune Toshiro.

My current favorite is Shibasaki Kou. Loved her in everything from Battle Royale, to Orange Days, to Good Luck!, to Dororo, to 47 Ronin, to Galileo....
I also really like Horikita Maki, Nakama Yukie, Inoue Mao, Hirosue Ryoko, Ueto Aya, Ayase Haruka, and Omasa Aya.

I'm also a huge Shibasaki fan! My favorite new-ish actress is Nishiuchi Mariya (GTO, Switch Girl). I'm also a fan of Shirota Yuu.

I already saw her name in this thread, my favourite japanese actress is Ayase Haruka. I didn't see that much drama or movies so my list is really short for the moment. But I currently watch a drama with Ayase Haruka, "きょうは会社休みます"(Kyou wa Kaisha Yasumimasu).
For actor, I would say Takeshi Kitano (I saw him in Battle Royale).

You'll also want to check out Mr. Brain (she plays opposite Kimura Takuya), Hotaru no Hikari I & II (she plays opposite Fujiki Naohito), and Tatta Hitotsu no Koi. She's actually been in a LOT of stuff, but most of her parts have been in dramas I'm not fond of (period pieces, or the really, really sad dramas where people end up dead).
